Yesterday I found a link to a great slow cooker recipe blog and decided to do something I’ve been wanting to do for a very long time—use my crock pot.
I found a recipe that I had all of the ingredients for (MIRACLE!) and cooked dinner at noon! SOOO COOL!
Here’s how it went.
Recipe: Chicken Parmesean

- 2 boneless, skinless chicken breast halves
- 1/2 cup bread crumbs
- 1/4 cup parmesan cheese
- 1/2 t Italian seasoning
- 1/4 t black pepper
- 1/4 t salt
- 1 T olive oil
- 1 beaten egg
- sliced mozzarella cheese
- favorite jarred marinara sauce
The recipe is really simple. Just mix up your breading, beat the egg, then dip the defrosted, rinsed and dried chicken breasts in the egg followed by the bread crumbs then place in the crock pot (which already has the olive oil in the bottom). Top with the mozzarella slices and empty the jar of sauce on top. Then set to low for 6-7 hours or high for 3-4 hours and voila! Yummy, tender, juicy chicken parmesan!

This dish turned out really nice! Matt inhaled it, so I think that says something. Best of all, this was sooooo simple to make! And I loved coming home from picking Matt up from work and having dinner ready to go. All I had to do was boil some pasta!
I think this marks a new chapter in my culinary adventures! I should probably invest in a more modern crockpot though. Specifically one that has a removable stoneware insert. Soooo much easier for cleaning!

I LOVE my crockpot. Even all the way over here in Japan. I have baked in it, cooked in it, and keep finding uses for it. It’s good with just about everything and the beer gives it so much flavour. Freezes beautifully, defrost and add fresh toppings! The other one I love (can you tell I like cooking mexican?) I am so trying this recipe. Seems easy and delish! Did you serve it with anything?

KELLY! I think that you’ve reignited my desire to use my slow cooker! I’ve been on hiatus for a while… Thank you for the recipe links!! My girls love Mexican, so I think these meals will be well received! For the chicken parmesan, I serve it over spaghetti or angel hair pasta, usually with a salad on the side. You’ll have to tell me what you think once you make it!

That slow cooker has been around FOR EVER, hence the ’70s avocado green exterior!! Good to see that it is still working!
However, a removable crock is definitely overdue!!!
